Add a little zest to Meatless Monday with this quick, cheesy mini-pizza recipe. We choose to top our pizza with a combination of red and yellow tomatoes but use this dish as an excuse to get everyone to eat more veggies—roasted red peppers or sautéed spinach would also be delicious. Serve with a side salad or use smaller tortillas and give everyone some variety.
